"Columbus Chopped"

I have been so lucky to have great friends here in Ohio. We have been able to spend lots of time together with our husbands working such LONG hours. I have explored the city and discovered so many fun things/places with these ladies. Today we got together for a fun evening of our version of "Columbus Chopped." We broke into two teams and in those teams we had to make an appetizer, main dish, and dessert. The ingredient chosen for appetizer was coconut, for main dish applesauce, and for dessert avocado. We also choose lime as a special ingredient that we had to incorporate in one of our dishes.We had such a fun time planning and preparing our meals. Our nice neighbor Jeannie was our judge. My group made a beautiful coconut fruit salad with a sugared lime drizzle. We made a crunchy strawberry chicken salad with an applesauce vinaigrette. And for dessert an awesome avocado vitamina (Brazilian) drink. It was kinda like a avocado banana smoothie=delish. I'm still not sure how, but the other team won. They made coconut shrimp, applesauce glazed pork-chops, and an avocodo strawberry smoothie. Thanks for the fun ladies!
